Cucumber Salad

5 medium plum tomatoes, seeded and chopped
1/4 red onion, peeled and chopped
2 cucumbers, thinly sliced
Olive oil, about 2 tablespoons
2 splashes red wine vinegar
Coarse salt and black pepper

Combine the tomatoes, onions, and cucumber with olive oil, red wine vinegar, add salt and pepper to taste

Yield: Approx 6-8 servings
